車麸でふっくらこんがり

車麸を卵にからませてから焼くとこんがりとふわふわに焼き上がります。
卵液をしっかり含ませるために車麸は水で戻したものを手でちぎってから浸すのがコツ。
ふっくらこんがり焼き上がった車麸は炒め物の中に入れてもおいしさそのままです。
アレンジ：ピカタ、にら玉

材料 （４人分）

車麸
４枚
ベーコン
１５０g
卵
４個
キャベツ
６枚
もやし
1袋
にんじん
１/２本
にら
１/２束
塩・醤油・こしょう
各適量
サラダ油
適量

調理時間 ２０分（※車麸を戻す時間を含まない）

作り方

  1. キャベツは手でひとくち大にちぎりボウルの中に入れ、塩少々をして軽くもむ。
    ベーコンは薄切り、にんじんは薄い短冊切り、にらは３～４㎝幅に切り、もやしはひげ根を取り除く。
  2. ボウルに卵を割りほぐし塩、こしょう少々で調味する。
    その中に水気をしっかりしぼった車麸をひとくち大ほどにちぎりながら入れて混ぜ、卵液を吸わせる。
  3. フライパンにサラダ油を熱し、①を手で少しずつまとめて数回に分けて両面をこんがり焼き、いったん取り出しておく。
  4. フライパンにサラダ油を少し足し、ベーコンを炒める。
    脂が出てきたら、にんじん、もやし、塩をしておいたキャベツを軽く絞って加えて炒める。
    しんなりしてきたら、にらと③を戻し入てしょうゆ、塩、こしょう少々で調味する。
