車麸とミートボールのトマト煮

車麸とミートボールのトマト煮

ミートボールとトマトの旨味をたっぷり吸った車麸が美味しいレシピです。
※材料の他に、ミートボールにナツメグ(少々)、ソースににんにくみじん切り(½片分)を加えるとさらに深い味わいになります。
お好みでミートボールを鶏もも肉に変えたり、マッシュルームやミックスビーンズを加えたり、ハーブで風味付けしたり、応用アレンジも楽しめます。

材料 (3~4人分)

車麸(戻したもの)
2枚
しめじ
1パック
A合い挽き肉
200g
A玉ねぎ
みじん切り¼個分
A溶き卵
½個
Bトマト缶(カット)
1缶(400g)
B 水 
1カップ(200㏄)
B醤油
小さじ2(~大さじ1)
Bケチャップ/蜂蜜
大さじ3/大さじ1
塩・こしょう/サラダ油
少々/大さじ½

調理時間 30分(車麸を戻す時間を含まない)

作り方

  1. 水に戻した車麸は、良くしぼって二等分に切る。
  2. ①のうち3切は、それぞれ三等分にし、残りの1切は手で細かく
    (指先でひねりつぶすように)ちぎって、さらによく絞り、ミートボールの材料にする。
  3. しめじは、石づきを切り落として小房に分けておく。
  4. ボウルに②のうち細かくちぎったもの、A(ミートボールの材料)を入れ(あれば、ナツメグ少々を加える。)、塩コショウ少々で下味をつける。
    粘り気が出るまでよく混ぜ、10個(50g/個)のミートボールを作る。
  5. 大きめのフライパンにサラダ油を入れて熱し、④のミートボールを並べ表面全体に焼き色が付くように焼く。
  6. ミートボールをフライパンの片側に寄せ、空いたスペースにしめじを加える。
    ※しめじを入れる前に、お好みでにんにくのみじん切り(½片分)を加え、さっと炒めると旨味がプラスされます。
  7. しめじを少し焼いたら、②の残りの車麸、Bを入れて強火で煮立てる。
    ※蜂蜜が無いときは、砂糖大さじ3で代用します。
  8. 煮立ったら中火にして、10~15分程、途中こげないように、煮汁を具材に回しかけながら混ぜる。
  9. 煮汁が少なくなり、とろみが付いたら味を見て、塩こしょうで味を調える。
    ※ここで煮汁を焦げない程度に良く煮詰めると、コクが出ます。
  10. 皿に盛り付け、みじん切りにしたパセリをちらす。
